Every batch of oil we press comes from a single family-owned Kalamata grove, milled at the Damouras Brothers mill in Trikorfo, under the Kalamata PDO designation. The mill is certified ISO 22000, ISO 9001, Bio Hellas organic, FDA-compliant, and Kosher. It has submitted its output for independent analysis to Multichrom.lab in Athens — an International Olive Council-recognized laboratory — since at least 2017. The latest panel on file (below) confirms the oil presses to genuinely fresh, early-harvest, extra-virgin standards.
The Kalamata PDO designation
Kalamata PDO is a European Protected Designation of Origin — a legal origin scheme recognized by EU Regulation 1151/2012. In 2015, the designation was extended to cover every municipality in the Messinia regional unit. Oil bearing the Kalamata PDO mark must be grown in one of the thirty-two designated municipalities, be pressed from 100 % Koroneiki olives with no blending, be milled within twelve hours of harvest, and be independently verified by ELOT or EOF.
Our grove is in Kalamata. Our olives are Koroneiki. Our mill is thirty-two kilometers north of the grove. Our oil presses within twelve hours of picking.

The 2017 Multichrom.lab panel
In February 2017, the Damouras mill submitted a sample of its output for independent analysis at Multichrom.lab in Athens, an International Olive Council-recognized laboratory. Certificate #60726 records the following against the EU regulatory limits for extra virgin olive oil:

The same panel screened for approximately 180 pesticide and chemical residues. All were either non-detectable or below the limit of quantification, with a single exception — a trace of alpha-cypermethrin at 0.015 mg/kg, more than 130 times below the European Union's maximum residue limit of 2.0 mg/kg.
This certificate is nine years old. It is on file here because it establishes something the current commercial output cannot yet prove on its own: the mill has the operational habit of IOC-level independent analysis. A fresh panel on the 2025/26 harvest — including the polyphenol figures the current cert does not include — is in the commissioning queue.
What we're commissioning next
The 2017 cert is strong on acidity, K-values, PPP, and pesticide clearance. It does not report the markers most often associated with premium early-harvest Koroneiki: total polyphenol content, hydroxytyrosol-and-derivative content (the EU-authorized health-claim marker), peroxide value, and a blind sensory panel. A submission to a comparable IOC-recognized lab on the 2025/26 harvest is being scheduled and will be published here when it returns.
What "fresh" means
An extra virgin olive oil's quality is a function of three things: the fruit, the speed of the press, and the oxidation clock. Fresh fruit (early harvest, picked green), a fast press (under twelve hours, cold-extracted, no heat), and a short oxidation clock (sealed tanks, dark glass, cool storage, consumed within the season) are the entire recipe. The markers above are how each of those is measured.
